I have been on an epic chia pudding kick concocting all sorts of different recipes to satisfy my dessert/treat cravings.

Chia truly is a superfood – it’s is high in iron, magnesium, antioxidants, protein, omega 3s, potassium, and calcium. Chia seeds are great for healthy skin because of the antioxidants, zinc, and omega 3s. I love chia if when I am restricting carbs because they supplement potassium, magnesium, and calcium! The seeds are also high in fiber and low in the glycemic index!

My most successful have been almond butter and chocolate, lemon creme, and mint chip. But, this Chai Tea Latte Pudding is by far my favorite AND the closest one to a traditional sweet dessert – I swear it tastes exactly like the Starbucks drink! (But it has honstly been a hot minute since I’ve had one).

Chai Tea Latte Chai Pudding

2 Tbls chia seeds

2 Tbsp hemp hearts

1/4 c coconut cream

1/2 c unsweetened flax milk (almond/coconut/cashew/etc)

1/4 tsp Masala chai spice mix

3 drops Vanilla Stevia (add more to taste)

** if you want to go lower calorie or lower fat, you could omit the coconut cream and do 3/4 c flax milk instead.

Combine all of the ingredients in a bowl and mix well with a fork making sure to separate any clumps of seeds that may have formed. Cover and put in the refrigerator for 15 minutes, it will set up and have a creamy consultancy.

This recipe makes 1 serving and has 400 calories – 30g fat, 14g protein, 18g carbs, 13g fiber.



  1. Ooh this sounds good! I love experimenting too. I’ve been using Chia Seeds, Quinoa Flakes, almond milk and some shredded coconut and then topping with flaked almonds and goji berries.
